With fixed times you know whether you can enter the tournament or not. Look at other team sports and activities. They have fixed playing times. If the time does not work for you then you do not become a member of the team. It is not the case that you become a member of the team and then do not show up whenever because the time did not work out for you. You would not be a member of that team for very long. If anything, this tournament has been too flexible trying to adapt for everyone's schedules. I would recommend in the future picking one day and making sure that matches are completed on that single day. For example, if you advertise that games will be played on Saturday then hopefully people will not sign up if they can not play on the day that the matches will occur.

There is a problem with the odd number of teams. The idea that one team plays twice in a week is fine provided that this applies consistently for all teams. In an elimination tournament it is likely that only a few teams would play the double matches and it would be to their disadvantage to do so. The first team to play double matches could be eliminated first thus creating an even number of teams whereby no one would need to play a double match until the next elimination.

Triple-elimination is a step too far. Limit tournaments to double-elimination.

Full results posting, matchups and scores, should be centralized. A visual bracket works nicely to display double-elimination tournaments.
